  • Crockpot Spaghetti was one of those accidental dishes that came about in college. I found this crockpot and asked around, but nobody claimed it, so I kept it. I lived in Tau Kappa Epsilon Fraternity, and we had this huge kitchen. That is how Crockpot Spaghetti got started.
  • Crockpot Chili is comfort food that will put a fire in your belly, or not. The ingredients are simple to make, and it is very user-friendly because you just put them together and leave it to simmer. You can make it as hot as you want, or you can make it mild. Whatever your choice, it is yummy.
  • Brazilian Feijoada, Black Bean Stew, is a thick and hearty comfort food that you can make anytime in your kitchen. This Hearty Meal comes from Brazil and is considered one of the delicacies in their culture. So come with me as I try to make this dish.

Keeping the Good Stuff:

The Waldo Family Recipes are a little piece of tasty memory. Every dish in this blog is like a time machine, transporting me back to when I was able to eat with abandon. I have to be a lot more careful, but I can remember and even have some of these foods from time to time. These recipes are amazing and delicious food memories that I wish to pass on to my friends and family. Here are some foods I enjoyed as I was growing up with my brother and cousins at our grandmother’s place next to the family ranch. She has 5 acres with a house built on them near the family ranch, which was 500 acres of wheat in the rich land known as the Palouse area just outside of Spokane, WA. in a place called Deer Park.

  • Potatoes Au Gratin was one of the foods that all of us grandkids loved. We would sit down and just eat those delicious potatoes until we were stuffed. Leftovers were awesome as well. Luckily, she wrote the recipe down for me, and I have kept it all these years.

  • Dessert Called Dirt with Worms is a blast to make and even better to eat. I have been making this since I was in college, so it has been 34 years. Because of its rich and sweet flavors, a Dessert Called Dirt may be difficult to combine with Fine Wine. In general, you want a wine that is sweet enough to complement the dessert but not overpower it. So enjoy this incredibly rich dessert, and have fun pairing it.
